Looking for a homemade Stromboli recipe that’s crispy on the outside and packed with gooey, melted cheese inside? This classic recipe is perfect as a main dish or sliced into bite-sized portions for a party appetizer. Follow the instructions carefully for the best results!

Equipment Needed:

  • Large mixing bowl
  • Rolling pin

Dough Ingredients:

  • 1 1/3 cups warm water (110°F)
  • 1 packet active dry yeast
  • 1 tbsp granulated sugar
  • 2 1/2 tbsp olive oil
  • 1 tsp salt
  • 4 cups all-purpose flour

Filling Ingredients:

  • 4 tbsp unsalted butter (melted)
  • 1 tbsp minced garlic
  • 2 tsp fresh parsley (chopped)
  • 1 lb large pepperoni slices
  • 1 lb shredded mozzarella cheese

Egg Wash:

  • 1 large egg (beaten with 1 tbsp of water)

Instructions:

Making the Dough:

  1. In a bowl, whisk together warm water, yeast, and sugar. Let it sit for 5 minutes until foamy.
  2. Add olive oil, salt, and flour gradually, mixing until well combined.
  3. Transfer the dough to a floured surface and knead until smooth and elastic.
  4. Shape the dough into a ball, place it in a greased bowl, and coat all sides with oil. Cover and let rise for 1 1/2 hours or until doubled in size.

Assembling the Stromboli:

  1. Preheat oven to 400°F and line two baking sheets with parchment paper.
  2. Once the dough has doubled in size, punch it down to release air and divide it into two equal portions.
  3. Roll each portion into a 10×16-inch rectangle using a rolling pin.
  4. Mix melted butter and garlic, then spread it over the dough. Sprinkle with parsley.
  5. Evenly distribute half of the pepperoni and cheese over each rectangle, leaving a 1-inch border at the bottom and a 3-inch border at the top.
  6. Brush the edges with egg wash, then carefully roll the dough tightly, folding the ends underneath as you go.
  7. Transfer the rolled Stromboli onto a baking sheet, brush with egg wash, and cut 4 small slits on top with a sharp knife.
  8. Bake for 20-25 minutes or until golden brown.
