🧁 Ingredients
Cake Base:
- ¾ cup liquid whipping cream or heavy cream
- ½ cup evaporated milk (125ml)cake
- 1½ tsp white vinegar
- ½ cup (113g) unsalted butter, softened
- ½ cup vegetable oil (125ml)
- ½ cup brown sugar (100g)
- ½ cup white sugar (100g)
- 3 large eggs
- 1 tsp vanilla extract
- ¼ cup Biscoff spread (cookie butter)
- 2½ cups all-purpose flour (300g)
- 1½ tsp baking powder
- ½ tsp baking soda
- ¼ cup cornstarch (30g)
- 4 Biscoff cookies (for crushing or topping)
Filling & Frosting:
- ⅓ cup unsalted butter, softened
- ⅓ cup confectioners’ sugar
- ½ cup cream cheese, softened (100g)
- 1 tsp vanilla extract
- Pinch of salt
- ⅓ cup Biscoff spread
- ½ cup whipping cream (whipped until fluffy)
- 4 Biscoff cookies, crushed
Optional Filling Glaze:
- ⅓ cup Biscoff spread
- ⅛ cup water (mix to create a drizzle)
👩🍳 Step-by-Step Instructions
Step 1: Prepare Wet Base
In a bowl, mix the whipping cream, evaporated milk, and vinegar. Let it sit for 5 minutes to create a homemade buttermilk substitute.
Step 2: Cream Butter & Sugars
In a large mixing bowl, beat butter, oil, brown sugar, and white sugar until light and fluffy.
Step 3: Add Eggs & Flavor
Add eggs one at a time, beating well after each. Mix in the vanilla extract and Biscoff spread.
Step 4: Combine Dry Ingredients
In a separate bowl, whisk together flour, baking powder, baking soda, and cornstarch.
Step 5: Build the Batter
Gradually add the dry ingredients to the wet mixture, alternating with the milk-vinegar mix. Mix until just combined. Don’t overmix!
Step 6: Bake
Pour batter into a greased or lined baking pan. Top with Biscoff cookies (optional).
Bake in a preheated oven at 180°C (350°F) for 35–40 minutes, or until a toothpick comes out clean.

- Beat the butter and icing sugar until creamy.
- Add cream cheese, vanilla, salt, and Biscoff spread. Mix until smooth.
- Gently fold in the whipped cream.
- Crush 4 Biscoff cookies and stir in for texture.

Mix ⅓ cup Biscoff spread with ⅛ cup water to make a glaze. Pour over the middle layer before frosting.
