
🐷 Chinese Spicy Pork Ribs

🛒 Ingredients:
- 1 kg pork short ribs (cut into 5–10 cm pieces)
- ⅓ cup garlic, finely chopped
- 5 tbsp oil
- 2 cups water
- 2 tbsp soy sauce
- ½ tbsp oyster sauce (optional)
- 1 tsp sugar
- 4 tbsp rice wine
- 3 slices ginger
- 4–5 tbsp chili powder (optional, adjust to taste)
👨🍳 Instructions:
1. Fry the Garlic
In a non-stick saucepan, heat the oil over medium heat. Add chopped garlic and fry until golden brown. Remove the garlic and set aside, reserving the garlic-infused oil.
2. Parboil the Pork Ribs
In the same saucepan, bring fresh water to a boil. Add the pork ribs and boil for 5 minutes to remove impurities. Drain, rinse the ribs under cold water, and set aside.
3. Braise the Ribs
Return the ribs to the saucepan. Add ginger, soy sauce, oyster sauce (if using), sugar, rice wine, and 2 cups of water. Bring to a simmer, cover with a lid, and cook on low for about 60 minutes, until the ribs are tender.
4. Caramelize the Sauce
Remove the lid, increase heat to high, and allow the sauce to reduce. Add the reserved garlic oil, stirring constantly, until the ribs are coated in a rich, sticky glaze (about 5–10 minutes). Watch carefully to prevent burning.
5. Spice and Finish
Stir in chili powder and the reserved fried garlic. Toss well to coat. Serve hot and enjoy!
