
Steak and Egg Breakfast Skillet
Satisfying, bold, and packed with protein — the ultimate one-pan breakfast!
Golden crispy potatoes, juicy steak bites, and perfectly cooked eggs all in one skillet. This dish is hearty enough for breakfast, brunch, or even a quick lunch!

Ingredients
- 1 tbsp olive oil 🫒
- 1/2 lb sirloin or ribeye steak, cut into bite-sized pieces 🥩
- 2 cups diced potatoes (russet or Yukon gold) 🥔
- 1/2 onion, chopped 🧅
- 1/2 bell pepper, diced (any color) 🫑
- 1 clove garlic, minced 🧄
- 1/2 tsp smoked paprika 🌶️
- Salt and black pepper to taste 🧂
- 2–4 eggs 🥚
- Chopped parsley or green onions, for garnish 🌿
- Optional: shredded cheese for topping 🧀
Instructions
- Heat the Oil:
In a large skillet over medium-high heat, heat the olive oil. - Cook the Potatoes:
Add the diced potatoes and cook for about 10–12 minutes, stirring occasionally, until golden and fork-tender. - Add Veggies:
Stir in the chopped onion, bell pepper, and garlic. Cook for another 3–4 minutes until softened and fragrant. - Cook the Steak:
Season steak pieces with salt, pepper, and smoked paprika. Add them to the skillet and sear for 2–3 minutes until browned but still tender. - Add Eggs:
Make small wells in the skillet and crack the eggs into them. Cover the skillet and cook until the eggs are done to your liking (runny or firm yolks—your call!). - Garnish & Serve:
Sprinkle chopped parsley or green onions and optional shredded cheese on top. Serve hot, straight from the skillet!
Serving Tip:
Top with avocado slices or a drizzle of hot sauce for an extra flavor boost!
