Satisfying, bold, and packed with protein — the ultimate one-pan breakfast!
Golden crispy potatoes, juicy steak bites, and perfectly cooked eggs all in one skillet. This dish is hearty enough for breakfast, brunch, or even a quick lunch!

Ingredients

  • 1 tbsp olive oil 🫒
  • 1/2 lb sirloin or ribeye steak, cut into bite-sized pieces 🥩
  • 2 cups diced potatoes (russet or Yukon gold) 🥔
  • 1/2 onion, chopped 🧅
  • 1/2 bell pepper, diced (any color) 🫑
  • 1 clove garlic, minced 🧄
  • 1/2 tsp smoked paprika 🌶️
  • Salt and black pepper to taste 🧂
  • 2–4 eggs 🥚
  • Chopped parsley or green onions, for garnish 🌿
  • Optional: shredded cheese for topping 🧀

Instructions

  1. Heat the Oil:
    In a large skillet over medium-high heat, heat the olive oil.
  2. Cook the Potatoes:
    Add the diced potatoes and cook for about 10–12 minutes, stirring occasionally, until golden and fork-tender.
  3. Add Veggies:
    Stir in the chopped onion, bell pepper, and garlic. Cook for another 3–4 minutes until softened and fragrant.
  4. Cook the Steak:
    Season steak pieces with salt, pepper, and smoked paprika. Add them to the skillet and sear for 2–3 minutes until browned but still tender.
  5. Add Eggs:
    Make small wells in the skillet and crack the eggs into them. Cover the skillet and cook until the eggs are done to your liking (runny or firm yolks—your call!).
  6. Garnish & Serve:
    Sprinkle chopped parsley or green onions and optional shredded cheese on top. Serve hot, straight from the skillet!

Serving Tip:

Top with avocado slices or a drizzle of hot sauce for an extra flavor boost!
