Peanut Butter S’mores Sandwich Cookies

Buttery peanut butter cookies, gooey toasted marshmallows, and rich melted chocolate all rolled in graham cracker crumbs for the ultimate campfire-inspired treat!


Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 12 large marshmallows, halved
  • 6 oz semi-sweet chocolate (chopped or chips)
  • Graham cracker crumbs (for rolling)

Instructions:

  1. Preheat the oven:
    Preheat to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Make the cookie dough:
    In a large bowl, beat together the butter, peanut butter, brown sugar, and granulated sugar until fluffy.
    Add in the egg and vanilla extract, mixing until smooth.
  3. Add dry ingredients:
    In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture until a dough forms.
  4. Form and bake cookies:
    Scoop the dough into 1-inch balls and place them on the baking sheets. Lightly flatten each with your fingers or a fork.
    Bake for 9–10 minutes or until golden at the edges. Let cool completely.
  5. Toast the marshmallows:
    Place halved marshmallows on a baking sheet and toast under the broiler for 30 seconds, or use a kitchen torch. Watch closely to prevent burning!
  6. Melt the chocolate:
    Microwave chocolate in 30-second intervals, stirring between each, until fully melted and smooth.
  7. Assemble the sandwiches:
    Spread melted chocolate on the flat side of one cookie, place a toasted marshmallow on top, and press a second cookie on top.
    Roll the edges in graham cracker crumbs.
  8. Enjoy!
    Serve warm for gooey goodness or let cool for a chewy, delicious cookie sandwich.
