
Peanut Butter S’mores Sandwich Cookies
Buttery peanut butter cookies, gooey toasted marshmallows, and rich melted chocolate all rolled in graham cracker crumbs for the ultimate campfire-inspired treat!
Ingredients:
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 12 large marshmallows, halved
- 6 oz semi-sweet chocolate (chopped or chips)
- Graham cracker crumbs (for rolling)
Instructions:
- Preheat the oven:
Preheat to 350°F (175°C). Line two baking sheets with parchment paper. - Make the cookie dough:
In a large bowl, beat together the butter, peanut butter, brown sugar, and granulated sugar until fluffy.
Add in the egg and vanilla extract, mixing until smooth. - Add dry ingredients:
In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture until a dough forms. - Form and bake cookies:
Scoop the dough into 1-inch balls and place them on the baking sheets. Lightly flatten each with your fingers or a fork.
Bake for 9–10 minutes or until golden at the edges. Let cool completely. - Toast the marshmallows:
Place halved marshmallows on a baking sheet and toast under the broiler for 30 seconds, or use a kitchen torch. Watch closely to prevent burning! - Melt the chocolate:
Microwave chocolate in 30-second intervals, stirring between each, until fully melted and smooth. - Assemble the sandwiches:
Spread melted chocolate on the flat side of one cookie, place a toasted marshmallow on top, and press a second cookie on top.
Roll the edges in graham cracker crumbs. - Enjoy!
Serve warm for gooey goodness or let cool for a chewy, delicious cookie sandwich.
