Braised Short Ribs with Red Wine & Creamy Garlic Mash

Tender, melt-in-your-mouth beef ribs slow-braised in red wine and herbs, served over fluffy garlic mashed potatoes. The ultimate comfort food with gourmet flair!


Ingredients

For the Braised Short Ribs:

  • 3 lbs beef short ribs
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 cups red wine (Cabernet Sauvignon or Merlot preferred)
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme or a few sprigs of fresh thyme
  • 1 bay leaf
  • 1 cup pearl or baby onions
  • 1 tbsp flour (optional, for thickening)

For the Garlic Mashed Potatoes:

  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 4 garlic cloves, peeled
  • ½ cup unsalted butter
  • ¾ cup whole milk or cream, warmed
  • Salt, to taste

Instructions

1️⃣ Sear the Ribs
Pat the short ribs dry and season well with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat. Sear the ribs on all sides until browned (about 2–3 minutes per side). Remove and set aside.

2️⃣ Build the Base
In the same pot, sauté the chopped onions until softened. Add minced garlic and cook for 1 minute. Stir in the tomato paste and cook until deep red and fragrant (about 2 minutes).

3️⃣ Deglaze & Simmer
Pour in the red wine and use a wooden spoon to scrape up any browned bits from the bottom. Let the wine simmer for 5 minutes to reduce slightly.

4️⃣ Braise the Ribs
Add beef broth, Worcestershire sauce, thyme, bay leaf, and pearl onions. Return the seared ribs to the pot. Cover and braise in a preheated oven at 325°F (163°C) for 2.5 to 3 hours, until the meat is tender and falling off the bone.
Optional: Stir in 1 tbsp of flour during the last 15 minutes to thicken the sauce.

5️⃣ Make the Garlic Mash
Meanwhile, boil potatoes and garlic cloves in salted water until fork-tender. Drain, then mash with butter and warm milk or cream. Season with salt to taste. For extra smooth mash, use a potato ricer or hand mixer.

6️⃣ Serve & Enjoy
Spoon mashed potatoes onto a plate or shallow bowl. Top with generous portions of braised short ribs and a ladle of the rich red wine sauce with onions. Garnish with fresh thyme or parsley.
