Ingredients
- 1 lb steak (sirloin or flank), thinly sliced
- 8 oz pasta (penne or fusilli recommended)
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can (14 oz) diced tomatoes (with juice)
- 2 cups beef broth
- 1 tsp Italian seasoning
- 1 tsp red pepper flakes (adjust to taste)
- Salt & pepper, to taste
- 1 cup grated parmesan cheese
- 2 tbsp fresh parsley, chopped (optional for garnish)
Instructions
1. Sear the Steak
Heat olive oil in a large pot over medium-high heat.
Add the steak slices, season with salt and pepper, and sear until browned.
Remove from the pot and set aside.
2. Sauté the Veggies
In the same pot, add a little more oil if needed.
Sauté onion, garlic, and red bell pepper until softened and fragrant—about 3–4 minutes.
3. Build the Sauce
Stir in diced tomatoes (with juice), beef broth, Italian seasoning, and red pepper flakes.
Bring the mixture to a simmer.
4. Cook the Pasta
Add dry pasta directly to the pot.
Stir well, cover, and let it cook, stirring occasionally, until pasta is al dente and most of the liquid is absorbed—about 10–12 minutes.
5. Finish & Serve
Return the seared steak to the pot and stir to combine.
Add parmesan cheese and mix until melted and creamy.
Taste and adjust seasoning as needed.
Top with chopped parsley and serve hot!
