🛒 Ingredients:

  • 500g lean ground beef
  • 1 medium zucchini, sliced into half-moons
  • 2 medium sweet potatoes, peeled & cubed small
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp chili powder (optional)
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

🔪 Instructions:

1. Sauté the Sweet Potatoes:

In a large skillet over medium heat, add olive oil and sweet potato cubes.
Cook for 10–12 minutes, stirring occasionally, until fork-tender.
Remove and set aside.

2. Brown the Beef:

In the same skillet, cook the ground beef until browned and fully cooked (5–7 min).
Drain excess fat.
Season with cumin, paprika, chili powder (if using), salt, and pepper.

3. Add Aromatics & Veggies:

Toss in diced onion and minced garlic. Cook for 2–3 minutes until fragrant.
Add zucchini and the pre-cooked sweet potatoes. Stir everything together and cook for 3–4 more minutes, until the zucchini is tender but not mushy.

4. Finish & Serve:

Adjust seasoning if needed.
Garnish with fresh chopped parsley and serve hot.
