Garlic Butter Shrimp with Sautéed Spinach

This quick and delicious dish combines tender shrimp sautéed in a rich garlic butter sauce with fresh, flavorful spinach. Perfect for a light yet satisfying meal!

Ingredients

For the Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • ½ tsp paprika
  • 1 tbsp lemon juice

For the Sautéed Spinach:

  • 3 cups fresh spinach
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Cook the Shrimp: Heat olive oil in a skillet over medium-high heat. Add shrimp and season with salt, black pepper, paprika, and red pepper flakes. Cook for 2 minutes per side until pink and opaque.
  2. Add Garlic Butter: Reduce heat to low, add butter and minced garlic, and stir until fragrant (about 1 minute). Drizzle with lemon juice and mix well.
  3. Sauté the Spinach: In a separate pan, heat olive oil over medium heat. Add garlic and sauté for 30 seconds. Toss in spinach, season with salt and black pepper, and cook until wilted (about 2 minutes).
  4. Serve & Enjoy: Plate the sautéed spinach and top with garlic butter shrimp. Garnish with extra lemon juice or fresh herbs if desired.
