Fruit Bruschetta

 

1 baguette, sliced into 1/2-inch pieces
1 cup ricotta cheese
1/2 cup strawberries, sliced
1/2 cup peaches, diced
1 kiwi, peeled and sliced
1/4 cup blueberries
1/4 cup raspberries
2 tablespoons honey
Fresh mint leaves, for garnish
Balsamic glaze, for drizzling

Directions:

Preheat oven to 375°F.
Place baguette slices on a baking sheet and toast for 8 to 10 minutes, or until lightly golden.
Spread a generous layer of ricotta cheese on each toasted slice.
Top with a combination of strawberries, peaches, kiwi, blueberries, and raspberries.
Drizzle each bruschetta with honey and a small amount of balsamic glaze.
Garnish with fresh mint leaves and serve immediately.
