Ingredients (Serves 4):
For the Protein:
- 1 lb large shrimp, peeled & deveined
- 6 oz smoked or beef sausage, thinly sliced
For the Pasta:
- 10 oz fettuccine (or pasta of choice)
For the Sauce & Veggies:
- 2 tbsp olive oil
- ½ yellow onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1 tsp Cajun or Creole seasoning
- ½ tsp dried oregano
- ½ cup crushed tomatoes
- 1 cup chicken stock
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
For Seasoning:
- Kosher salt & freshly ground black pepper, to taste
Instructions:
1️⃣ Season & Cook the Shrimp:
In a bowl, toss shrimp with Cajun seasoning, oregano, salt, and pepper.
Heat 1 tbsp olive oil in a large skillet over medium heat. Sear shrimp for 2–3 minutes per side until pink and lightly browned. Remove and set aside.
2️⃣ Cook the Sausage:
In the same pan, heat the remaining 1 tbsp olive oil. Add sausage slices and brown on both sides. Remove and set aside.
3️⃣ Sauté the Veggies:
Add onions, bell peppers, and garlic to the skillet. Sauté for 5 minutes or until soft and fragrant.
4️⃣ Make the Creamy Cajun Sauce:
Stir in crushed tomatoes and chicken stock. Simmer for 3 minutes.
Add heavy cream and Parmesan cheese, stirring until smooth and slightly thickened.
Taste and adjust seasoning as needed (more Cajun spice = more heat!).
5️⃣ Cook the Pasta:
Meanwhile, cook pasta according to package directions. Drain, then add it directly to the sauce.
6️⃣ Bring It All Together:
Return the shrimp and sausage to the skillet. Toss everything together until well-coated and heated through.
7️⃣ Serve & Enjoy:
Garnish with chopped parsley and extra Parmesan if you like.
Serve hot and enjoy the bold, creamy, spicy goodness!
