
Choc Chip Ginger Cookies

These ginger-spiced chocolate chip cookies are a delicious twist on a classic, blending the warmth of ginger and cinnamon with the sweet richness of chocolate.
Ingredients:
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ⅓ cup brown sugar
- ½ cup chocolate chips
- ½ cup butter, at room temperature (113g)
- ½ tsp ground cinnamon
- 3 tsp ground ginger
- 4 tbsp golden syrup or honey
- ¼ tsp salt
Instructions:
1️⃣ Mix the dry ingredients:
In a large bowl, sift together the flour, baking powder, baking soda, cinnamon, ginger, and salt. Add in the brown sugar and whisk to combine.
2️⃣ Add the butter:
Rub the butter into the dry ingredients using your fingertips until the mixture becomes crumbly, like coarse sand.
3️⃣ Form the dough:
Add the golden syrup (or honey) and mix until a dough forms. Fold in the chocolate chips gently.
4️⃣ Shape the cookies:
Use a spoon or ice cream scoop to portion the dough. Roll into balls and place on a baking tray lined with parchment paper.
5️⃣ Flatten:
Gently press each dough ball down slightly with the back of a spoon or your palm.
6️⃣ Bake:
Bake in a preheated oven at 180°C (350°F) for 12–15 minutes, or until the edges are golden brown.
