Broccoli & Cheese Omelet with Garlic Roasted Potatoes 🧀🔥
A delicious, protein-packed breakfast to start your day right!

📝 Ingredients:

For the Broccoli & Cheese Omelet:
3 large eggs
1 tbsp milk (optional, for fluffiness)
½ cup broccoli florets, chopped
¼ cup shredded cheddar cheese
1 tbsp crumbled feta cheese (optional)
½ tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional)
1 tsp butter or olive oil
For the Garlic Roasted Potatoes:
1½ cups baby potatoes, halved
1 tbsp olive oil
½ tsp garlic powder
½ tsp smoked paprika
½ tsp salt
½ tsp black pepper
1 tsp fresh parsley, chopped

Directions:

1️⃣ Prepare the Roasted Potatoes:
Preheat oven to 425°F (220°C).
Toss halved baby potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper.
Spread on a baking sheet and roast for 25-30 minutes, flipping halfway through.
Garnish with fresh parsley.

2️⃣ Cook the Omelet:
In a bowl, whisk eggs with milk, salt, and black pepper.
Heat butter in a non-stick pan over medium heat.
Sauté chopped broccoli for 1-2 minutes until slightly tender.
Pour in the egg mixture and let it cook undisturbed for 2-3 minutes.
Sprinkle shredded cheddar cheese and feta on one side.
Fold the omelet in half and cook for another minute.

3️⃣ Assemble & Serve:
Plate the omelet with roasted potatoes on the side.
Garnish with red pepper flakes for extra heat.
