
🍝 Beef Garlic Parmesan Pasta with Spinach and Mushrooms 🍄🥩🧄
A rich, hearty pasta dish loaded with tender beef, earthy mushrooms, fresh spinach, and a creamy garlic-Parmesan sauce. This comfort meal is perfect for any day of the week!
🛒 Ingredients:
For the Beef:
- 500g beef sirloin, cut into small pieces
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 3 tbsp butter
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ cup grated Parmesan cheese
- ¼ cup white wine (optional)
For the Pasta:
- 300g rotini pasta
- 2 cups fresh spinach
- 200g mushrooms, sliced
- 2 cloves garlic (for mushrooms), minced
- 2 tbsp olive oil (for mushrooms)
- 1 tbsp butter (for mushrooms)
- ½ tsp salt (for mushrooms)
- ¼ tsp black pepper (for mushrooms)
- 1 tbsp lemon juice
To Finish:
- Fresh parsley, chopped (for garnish)
- Extra Parmesan cheese (for serving)
- Red pepper flakes (optional)
👨🍳 Instructions:
- Cook the Beef:
In a large skillet, heat 3 tbsp olive oil and 3 tbsp butter over medium heat. Add 4 cloves of minced garlic and sauté until golden.
Add the beef pieces, season with salt, pepper, oregano, and thyme. Cook until browned (5–7 min).
If using wine, pour it in and let simmer for 2–3 minutes. Remove beef from the skillet and set aside. - Cook the Pasta:
In a large pot, boil salted water and cook the rotini until al dente. Drain and reserve ½ cup of pasta water. - Sauté Mushrooms and Spinach:
In the same skillet, add 2 tbsp olive oil and 1 tbsp butter. Sauté 2 cloves of garlic for 30 seconds.
Add mushrooms, salt, and pepper. Cook until golden brown (about 5 min).
Add spinach and cook until wilted. Drizzle with lemon juice. - Combine Everything:
Return the cooked beef to the skillet. Add the cooked pasta, Parmesan cheese, and reserved pasta water as needed to create a creamy texture. Stir gently to combine. - Garnish and Serve:
Sprinkle with fresh parsley, extra Parmesan, and red pepper flakes if desired. Serve warm and enjoy every bite! 😋
