
Avocado Pasta Salad Recipe
Ingredients
8 oz bowtie pasta (farfalle)
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1/2 cup red onion, finely diced
1/2 cup cucumber, diced
1/2 cup corn (cooked and cooled)
1/4 cup fresh cilantro, chopped
For the Dressing:
1 avocado, mashed
2 tbsp olive oil
2 tbsp lime juice
1 clove garlic, minced
1/2 tsp ground cumin
Salt and pepper, to taste
Instructions
Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the bowtie pasta according to package instructions until al dente.
Drain, rinse with cold water, and set aside to cool.
Prepare the Dressing
In a small bowl, mash 1 avocado until smooth.
Whisk in olive oil, lime juice, minced garlic, and ground cumin.
Season with salt and pepper to taste.
Assemble the Salad
In a large mixing bowl, combine the cooled pasta, diced avocados, cherry tomatoes, red onion, cucumber, and corn.
Drizzle the creamy avocado dressing over the salad.
Gently toss to coat all ingredients evenly.
Garnish and Serve
Sprinkle fresh cilantro on top for a burst of flavor.
Serve immediately or chill for 30 minutes to let the flavors meld together.
