🥩 Ingredients

  • 1 lb (450g) flank or sirloin steak, thinly sliced
  • 1 tbsp olive oil or butter
  • 1 medium onion, sliced
  • 1 small bell pepper (red or green), sliced
  • 1 tsp garlic powder
  • 1 tsp paprika (optional for a smoky touch)
  • Salt & pepper to taste
  • 1 ½ cups shredded cheese (cheddar, mozzarella, or Mexican blend)
  • 4 large flour tortillas
  • Optional: sour cream, salsa, or guacamole for serving

🍳 Directions

1. Cook the Steak

Heat olive oil in a large skillet over medium-high heat. Season the sliced steak with garlic powder, paprika, salt, and pepper. Sear until browned and cooked through, about 4–5 minutes. Remove from skillet and set aside.

2. Sauté the Veggies

In the same skillet, add a little more oil if needed. Sauté onions and bell peppers for 3–4 minutes until tender and slightly caramelized.

3. Assemble the Quesadillas

Lay out your tortillas. On one half of each tortilla, layer cheese, cooked steak, and sautéed vegetables. Fold the other half over to close.

4. Grill the Quesadillas

Wipe the skillet clean and return to medium heat. Cook each quesadilla for 2–3 minutes per side or until golden brown and the cheese is fully melted.

5. Slice & Serve

Let rest for 1 minute before slicing into wedges. Serve warm with sour cream, guacamole, or salsa on the side.
