✅ Servings: 4
🕒 Prep Time: 10 minutes
🔥 Cook Time: 15 minutes
🥩 Ingredients
- 1 lb (450g) flank or sirloin steak, thinly sliced
- 1 tbsp olive oil or butter
- 1 medium onion, sliced
- 1 small bell pepper (red or green), sliced
- 1 tsp garlic powder
- 1 tsp paprika (optional for a smoky touch)
- Salt & pepper to taste
- 1 ½ cups shredded cheese (cheddar, mozzarella, or Mexican blend)
- 4 large flour tortillas
- Optional: sour cream, salsa, or guacamole for serving
🍳 Directions
1. Cook the Steak
Heat olive oil in a large skillet over medium-high heat. Season the sliced steak with garlic powder, paprika, salt, and pepper. Sear until browned and cooked through, about 4–5 minutes. Remove from skillet and set aside.
2. Sauté the Veggies
In the same skillet, add a little more oil if needed. Sauté onions and bell peppers for 3–4 minutes until tender and slightly caramelized.
3. Assemble the Quesadillas
Lay out your tortillas. On one half of each tortilla, layer cheese, cooked steak, and sautéed vegetables. Fold the other half over to close.
4. Grill the Quesadillas
Wipe the skillet clean and return to medium heat. Cook each quesadilla for 2–3 minutes per side or until golden brown and the cheese is fully melted.
5. Slice & Serve
Let rest for 1 minute before slicing into wedges. Serve warm with sour cream, guacamole, or salsa on the side.
💡 Tips for Success
- For easy slicing, let the steak rest before cutting—this keeps it juicy!
- Want extra crisp? Brush tortillas with a touch of melted butter before grilling.
- Looking for a spicy twist? Add chopped jalapeños or hot sauce inside the quesadilla.
🥗 Pair It With
Try serving your steak quesadillas alongside:
- A fresh avocado-tomato salad
- Mexican-style rice
- A zesty lime slaw for crunch
This recipe is great for all ages and especially ideal for older adults who want bold flavor without complicated prep. It’s soft, cheesy, protein-rich, and oh-so-comforting!
