🥩🍄 Beef and Mushroom Wellington

A perfectly seared tenderloin wrapped in garlicky mushroom duxelles, prosciutto, and golden puff pastry—this dish is a true culinary showpiece, ideal for special occasions or intimate dinners!


📝 Ingredients:

  • 1.5–2 lb beef tenderloin 🥩
  • Salt and pepper, to taste 🧂
  • 2 tbsp olive oil 🛢️
  • 2 tbsp Dijon mustard
  • 1 tbsp butter
  • 10 oz cremini or button mushrooms, finely chopped 🍄
  • 2 cloves garlic, minced 🧄
  • 1 tsp fresh thyme leaves 🌿
  • 6 slices prosciutto
  • 1 sheet puff pastry, thawed 🥐
  • 1 egg, beaten (for egg wash) 🥚

🔥 Instructions:

1️⃣ Preheat & Season

Preheat oven to 400°F (200°C). Generously season beef with salt and pepper.

2️⃣ Sear the Beef

Heat olive oil in a skillet over high heat. Sear beef on all sides (2–3 minutes per side). Remove and let cool. Brush all over with Dijon mustard.

3️⃣ Make Mushroom Duxelles

In the same skillet, melt butter. Add mushrooms, garlic, and thyme. Sauté until moisture evaporates and mixture is thick (like a paste). Let it cool completely.

4️⃣ Wrap with Prosciutto & Chill

On plastic wrap, layer prosciutto slices slightly overlapping. Spread cooled mushroom mixture on top. Place beef on one edge and roll tightly using the plastic wrap. Chill in the fridge for 15–20 minutes.

5️⃣ Wrap in Puff Pastry

Roll out puff pastry. Unwrap beef roll and place in the center. Fold and seal the edges of the pastry around the beef. Brush with egg wash.

6️⃣ Bake

Place seam-side down on a baking tray. Bake for 30–35 minutes, or until golden brown and the internal temp reaches 125°F (52°C) for medium-rare.

7️⃣ Rest & Serve

Let rest for 10 minutes before slicing. Serve warm for maximum wow factor!
