🛒 Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt & freshly ground black pepper, to taste

For the Spinach Feta Couscous:

  • 1 tbsp olive oil
  • 1 cup couscous
  • 1¼ cups low-sodium chicken broth
  • 2 cups fresh spinach, chopped
  • ½ cup crumbled feta cheese
  • 1 tbsp lemon juice
  • ½ tsp dried oregano
  • Salt & pepper, to taste

👩‍🍳 Instructions

1. Bake the Chicken:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Rub chicken breasts with olive oil, then season with garlic powder, onion powder, paprika, salt, and pepper.

Place them on the prepared baking sheet and bake for 22–25 minutes, or until the internal temperature reaches 165°F (74°C). Remove and let rest for 5 minutes before slicing.

2. Make the Couscous:

While the chicken bakes, heat 1 tbsp olive oil in a saucepan over medium heat. Add the couscous and toast it gently for 2–3 minutes until slightly golden and fragrant.

Add chicken broth, bring to a boil, then remove from heat. Cover and let sit for 5 minutes.

Fluff the couscous with a fork. Stir in chopped spinach, feta cheese, lemon juice, oregano, and season with salt and pepper to taste. The residual heat will gently wilt the spinach and melt the feta slightly for a creamy texture.

3. Plate & Serve:

Spoon the couscous onto plates and top with sliced baked chicken. Garnish with a few extra crumbles of feta or a lemon wedge for brightness.
