Garlic Butter & Herb Roast Chicken 🍗🧄

This tender, juicy, and flavorful roast chicken is a family favorite! Roasted to golden perfection with garlic, butter, and fresh herbs, it’s crispy on the outside and succulent on the inside. Perfect for Sunday dinners or special occasions!


📝 Ingredients:

  • 4 lb whole chicken 🐔

  • ¼ cup unsalted butter, melted 🧈

  • 3 tbsp olive oil 🫒

  • ¼ cup white wine 🍷

  • 1 lemon, halved 🍋

  • Salt & black pepper (to taste)

  • 2 tbsp fresh parsley, chopped 🌿

  • 9 garlic cloves (4 minced, 5 whole) 🧄

  • 3 sprigs fresh rosemary 🌿

  • 1 sprig fresh thyme 🌿


🔥 Instructions:

1️⃣ Preheat & Prepare:

  • Preheat oven to 425°F (220°C).

  • Line a baking tray with foil or grease a roasting pan.

2️⃣ Season the Chicken:

  • Remove the neck & giblets from the chicken cavity and trim excess fat.

  • Pat the chicken dry with paper towels for a crispier skin.

  • Pour olive oil, melted butter, white wine, and lemon juice (from half a lemon) over the chicken, under the skin, and inside the cavity.

  • Season well with salt, pepper, and parsley.

  • Rub minced garlic all over the chicken, making sure to get some under the skin.

3️⃣ Stuff & Roast:

  • Stuff the chicken cavity with:
    Whole garlic cloves 🧄
    Rosemary sprigs 🌿
    Squeezed lemon half 🍋

  • Place the chicken breast-side up in the prepared roasting pan.

  • Roast for 1 hour and 20 minutes, basting with pan juices halfway through.

4️⃣ Rest & Serve:

  • Once the chicken is golden brown and cooked through (juices run clear when pierced), remove from the oven.

  • Tent with foil and let it rest for 10 minutes before serving.

  • Serve with the remaining lemon half & pan juices for extra flavor!
