Ingredients
For the Chicken:
- 2 large boneless, skinless chicken breasts (cut into thin cutlets or bite-sized pieces)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 tbsp olive oil
- 1 tbsp butter
For the Sauce:
- 2 tbsp butter
- 8 oz (225g) mushrooms, sliced (cremini or white button work well)
- 4 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for a lighter version)
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional, for a bit of heat)
- 1 tbsp chopped fresh parsley (for garnish)
For the Pasta:
- 8 oz (225g) fettuccine or penne pasta
- Salt for boiling water
Instructions
1️⃣ Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
- Drain and set aside. Reserve about 1/4 cup of the pasta water for later if needed.
2️⃣ Cook the Chicken:
- Season chicken pieces with salt, pepper, garlic powder, and paprika.
- In a large skillet over medium-high heat, melt the butter and add the olive oil.
- Add the chicken and cook for about 4–5 minutes per side, or until golden brown and cooked through.
- Remove the chicken from the pan and set aside.
3️⃣ Make the Sauce:
- In the same skillet, melt 2 tablespoons of butter.
- Add the sliced mushrooms and cook for 5–6 minutes until softened and golden.
- Stir in the garlic and cook for an additional minute until fragrant.
- Add the chicken broth and let it simmer for 2 minutes.
- Reduce the heat to low and stir in the heavy cream, Parmesan cheese, salt, pepper, Italian seasoning, and red pepper flakes (if using).
- Let the sauce simmer gently for 4–5 minutes until thickened.
4️⃣ Combine:
- Return the cooked chicken to the skillet and spoon some of the sauce over it. Let it simmer for another 5 minutes to soak in the flavors.
- Add the cooked pasta and toss gently to coat. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
5️⃣ Serve:
- Plate the pasta and top with chicken and extra sauce.
- Garnish with freshly chopped parsley and more Parmesan if desired.
