  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • 3 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Preheat the Oven

Set your oven to 375°F (190°C) and lightly grease a baking dish.


Step 2: Sauté the Garlic & Mushrooms

In a skillet over medium heat, melt the butter. Add garlic and sauté for 1 minute until fragrant.
Toss in the mushrooms, thyme, parsley, salt, and pepper. Cook for 5–7 minutes, until mushrooms are golden and the moisture is gone.


Step 3: Make the Cheese Filling

Transfer the mushroom mixture to a bowl. Stir in the cream cheese and mozzarella until smooth and combined.


Step 4: Stuff the Chicken

Carefully slice a pocket into each chicken breast without cutting all the way through.
Stuff each with a generous spoonful of the mushroom cheese filling.


Step 5: Bake It

Place the stuffed chicken breasts in the greased baking dish.
Sprinkle Parmesan cheese on top for a golden, cheesy crust.
Bake for 25–30 minutes, or until the chicken is fully cooked (internal temp should reach 165°F / 74°C).
