
🌮 Authentic Chicken Enchiladas Recipe 🌶️🧀
These cheesy, flavorful, and easy-to-make chicken enchiladas are a family favorite! Perfect for a weeknight dinner, this dish is simple to customize with all your favorite toppings. Bonus? The kids can help assemble them!
📝 Ingredients:
✅ 2 tbsp avocado oil 🥑
✅ 1 large white onion, diced 🧅
✅ 1 rotisserie chicken, shredded 🍗
✅ 4.5 oz can diced green chilies 🌶️
✅ Sea salt & black pepper (to taste)
✅ 16 oz can black beans, drained 🫘
✅ 8 large flour tortillas 🌯
✅ 3 ½ cups Mexican-blend shredded cheese 🧀
✅ 1 large can red enchilada sauce 🍅
✅ Chopped cilantro (for garnish) 🌿
✅ Chopped red onion (for garnish) 🧅
✅ Sour cream (for garnish) 🍶
✅ Chopped jalapeño (for garnish) 🌶️
🔥 Instructions:
1️⃣ Preheat & Prep:

Preheat oven to 350°F (175°C).

Grease a casserole dish and set aside.
2️⃣ Cook the Filling:

Heat avocado oil in a large sauté pan over medium-high heat.

Add onions and sauté for 4 minutes, stirring occasionally.

Stir in shredded chicken & green chilies. Season generously with salt & pepper.

Cook for 4 more minutes, then mix in black beans and stir until combined.

Remove from heat and set aside.
3️⃣ Assemble the Enchiladas:

Create an assembly line with tortillas, enchilada sauce, chicken-bean mixture, and cheese.

Lay out one tortilla and spread 2 ½ tbsp enchilada sauce over it.

Add a generous spoonful of the chicken mixture in the center.

Sprinkle ⅓ cup of cheese on top.

Roll up the tortilla tightly and place it seam-side down in the greased dish.

Repeat with the remaining tortillas.
4️⃣ Bake & Serve:

Pour the remaining enchilada sauce over the rolled tortillas.
