Berry and Peach Cheesecake Recipe – The Ultimate Creamy Dessert

📝 Ingredients

For the Crust:

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

4 (8-ounce) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

1 cup heavy cream

1 cup fresh peaches, peeled and diced (or canned, drained)

1 cup mixed berries (strawberries, blueberries, raspberries – fresh or thawed if frozen)

For the Berry & Peach Topping:

1 cup fresh peaches, peeled and sliced

1 cup mixed berries

¼ cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch mixed with 2 tablespoons water

 

👩‍🍳 Step-by-Step Instructions

1. Make the Crust:

1. Preheat oven to 325°F (163°C).

2. In a bowl, combine graham cracker crumbs, sugar, and melted butter until it looks like wet sand.

3. Press the mixture firmly into the bottom of a 9-inch springform pan.

4. Bake for 10 minutes, then let it cool while you prepare the filling.

 

2. Prepare the Cheesecake Filling:

1. Beat the softened cream cheese in a large bowl until smooth and creamy.

2. Gradually add sugar and mix well.

3. Stir in vanilla extract.

4. Add eggs one at a time, mixing on low until just combined.

5. Gently fold in sour cream and heavy cream until smooth.

6. Carefully mix in diced peaches and berries.

7. Pour over the cooled crust and smooth the top with a spatula.

 

3. Bake the Cheesecake:

1. Place the springform pan on a baking sheet to catch drips.

2. Bake for 60–70 minutes until the center is almost set but still slightly jiggly.

3. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour to avoid cracks.

4. Refrigerate for at least 4 hours, preferably overnight, for best texture.

 

4. Prepare the Topping:

1. In a saucepan, combine sliced peaches, berries, sugar, and lemon juice.

2. Cook over medium heat for 5 minutes until juices are released.

3. Stir in cornstarch slurry and cook 2–3 minutes until thickened.

4. Remove from heat and cool completely.

 

5. Assemble & Serve:

1. Remove cheesecake from the springform pan carefully.

2. Spoon the peach and berry topping evenly over the cheesecake.

3. Garnish with extra fresh fruit if desired.
