Ingredients

For the crust:

  • 7 tbsp unsalted butter, melted
  • 1½ cups graham cracker crumbs
  • 2 tbsp granulated sugar

For the filling:

  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1 cup heavy whipping cream

For the topping:

  • 1 can cherry pie filling
  • Optional: fresh cherries, extra graham crumbs, or a drizzle of chocolate

Instructions

1. Prepare the Crust

  • Melt the butter in a small saucepan over low heat. Keep an eye on it to avoid burning.
  • In a bowl, combine the graham cracker crumbs and sugar, then mix in the melted butter until the texture resembles wet sand.
  • Press the mixture firmly into the bottom and slightly up the sides of a 9-inch pie dish.
  • Place in the fridge to chill for 15 minutes while you prep the filling.

2. Make the Creamy Filling

  • In a large bowl, beat the softened cream cheese until smooth and fluffy.
  • Gradually add powdered sugar and vanilla, beating until fully combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until well blended.

3. Assemble the Delight

  • Spread the cream cheese layer evenly over the chilled crust.
  • Spoon the cherry pie filling on top, spreading it gently to cover the surface.

4. Chill and Serve

  • Refrigerate for at least 3 hours (preferably overnight) to set.
  • Before serving, top with fresh cherries, extra crumbs, or a drizzle of caramel or chocolate for a fancy touch.
