- 1 tsp salt
- 4 tsp ground cinnamon
- 1 cup chopped walnuts or mixed nuts
Cream Cheese Frosting:
- 1 cup cream cheese (softened)
- ½ cup icing sugar
- 1 tsp vanilla essence

- Marinate the Carrots:
In a medium bowl, combine grated carrots and brown sugar. Let sit for 1 hour — this enhances moisture and flavor. Stir in raisins afterward. - Prep the Oven & Pans:
