Cake:

  • 4 cups grated carrots
  • ½ cup brown sugar
  • 1 cup raisins (optional)
  • 4 eggs
  • 1 cup white sugar
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup crushed pineapple, drained
  • 3 cups all-purpose flour
  • 1½ tsp baking soda (or bicarbonate of soda)
  • 1 tsp salt
  • 4 tsp ground cinnamon
  • 1 cup chopped walnuts or mixed nuts

Cream Cheese Frosting:

  • 1 cup cream cheese (softened)
  • ½ cup icing sugar
  • 1 tsp vanilla essence

  1. Marinate the Carrots:
    In a medium bowl, combine grated carrots and brown sugar. Let sit for 1 hour — this enhances moisture and flavor. Stir in raisins afterward.
  2. Prep the Oven & Pans:
    Preheat oven to 350°F (175°C). Grease and flour two 10-inch round cake pans.
  3. Mix the Batter:
    In a large bowl, beat eggs until fluffy. Slowly mix in white sugar, vegetable oil, and vanilla. Add crushed pineapple and stir until combined.
  4. Combine Dry Ingredients:
    In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add dry mix to the wet mixture and blend until absorbed.
  5. Finish the Batter:
    Fold in the carrot mixture and chopped nuts until evenly distributed.
  6. Bake:
    Divide batter between prepared pans. Bake for 45–50 minutes or until a toothpick comes out clean. Let cool for 10 minutes before removing from pans. Cool completely before frosting.
  7. Make the Frosting:
    Beat cream cheese, vanilla, and icing sugar together until smooth and creamy.
  8. Assemble the Cake:
    Sandwich the two cake layers together with frosting. Spread remaining frosting generously on top and sides.
