
Stuffed Pepper Casserole

Ingredients:
- 1 lb ground beef
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 cup cooked white rice
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- Salt & black pepper to taste
Instructions:
1️⃣ Preheat Oven:
Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
2️⃣ Cook the Beef:
In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
3️⃣ Sauté the Veggies:
Add the diced onion, green pepper, and red pepper to the skillet. Cook for about 5 minutes until softened.
4️⃣ Combine & Simmer:
Stir in the diced tomatoes (with juice), cooked white rice, garlic powder, salt, and pepper. Let everything cook together for about 5 minutes.
5️⃣ Assemble:
Transfer the beef and rice mixture into the prepared baking dish. Sprinkle shredded cheddar cheese evenly on top.
6️⃣ Bake:
Bake for 25–30 minutes, or until the cheese is melted, golden, and bubbly.
