Stir-Fry Pork Liver Recipe

A bold and flavorful dish that’s rich in iron and quick to prepare!

Ingredients:

  • 300g pork liver
  • 1 bottle of beer
  • 2 tbsp soy sauce (plus extra for seasoning)
  • 2 tbsp cooking oil
  • 1/2 tsp ground black pepper
  • 1 thumb-sized piece of shredded ginger
  • 1 chili pepper, sliced
  • 2 stalks of green onions, chopped
  • 2 cloves garlic, minced
  • Salt to taste

Instructions:

  1. Prep the Liver:
    Rinse the pork liver under cold water, then slice it thinly. Place in a bowl and pour over the beer. Let it soak for 10–15 minutes to eliminate any strong odor.
  2. Marinate:
    Drain the liver once the alcohol has mostly evaporated. Add shredded ginger, ground black pepper, soy sauce, and a pinch of salt. Let it marinate for 10 minutes.
  3. Stir-Fry:
    Heat cooking oil in a wok or skillet over medium-high heat. Add minced garlic and chili slices. Stir-fry until fragrant (about 30 seconds).
  4. Cook the Liver:
    Add the marinated pork liver and stir-fry quickly for 2–3 minutes until it changes color.
  5. Final Touch:
    Add a splash of soy sauce and stir. Once the liver is fully cooked (but not overdone), turn off the heat and sprinkle with chopped green onions.

Tips:

  • Don’t overcook the liver—it should be tender, not rubbery.
  • For extra aroma, you can add a dash of sesame oil before serving.

Enjoy it hot with steamed rice or noodles!
