
Spiced Lamb Meatballs with Pomegranate Glaze

Ingredients
For the Meatballs:
- 1 lb ground lamb
- 1/4 cup breadcrumbs
- 1 egg
- 2 garlic cloves, minced
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh mint, chopped
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/4 tsp ground cinnamon
- 1/4 tsp chili flakes (optional)
- Salt and pepper to taste
- Olive oil, for searing
For the Pomegranate Glaze:
- 1/2 cup pomegranate molasses
- 1 tbsp honey
- 1 tsp lemon juice
- Pinch of salt
- 1 tbsp water (optional, to thin glaze)
For Garnish (Optional but Recommended):
- Fresh pomegranate seeds
- Chopped parsley or mint
- Crumbled feta
Directions
1️⃣ Make the Meatballs:
In a large bowl, mix together the lamb, breadcrumbs, egg, garlic, herbs, and spices. Gently mix until just combined — don’t overwork the meat.
2️⃣ Form & Sear:
Shape into 1.5-inch balls. Heat olive oil in a skillet over medium heat. Sear meatballs until browned on all sides and nearly cooked through (about 8–10 minutes). Set aside.
3️⃣ Make the Glaze:
In the same skillet, reduce heat to low. Add pomegranate molasses, honey, lemon juice, salt, and a splash of water if needed. Simmer until thickened slightly (3–5 minutes).
4️⃣ Glaze the Meatballs:
Return meatballs to the skillet and toss to coat. Let simmer in the glaze for another 2–3 minutes until fully cooked and sticky.
5️⃣ Garnish & Serve:
Plate the meatballs, drizzle with any remaining glaze, and top with pomegranate seeds, herbs, and crumbled feta if using.
