A bold mix of smoked sausage, vibrant veggies, and rice simmered in savory spices—this Louisiana classic is packed with flavor and surprisingly easy to whip up on any weeknight!
Ingredients:
- 1 tbsp olive oil
- 14 oz smoked sausage (Andouille or kielbasa), sliced into rounds
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 cup long grain white rice
- 1 (14.5 oz) can diced tomatoes (with juice)
- 2 cups chicken broth
- 1 tsp paprika
- 1/2 tsp dried thyme
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and black pepper, to taste
- 2 green onions, sliced (for garnish)
Instructions:
- Brown the sausage:
Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sausage rounds and cook until browned. Remove and set aside. - Sauté the veggies:
In the same pan, sauté onion, bell pepper, and celery for 4–5 minutes until softened. - Add garlic & seasonings:
Stir in the garlic and cook for 1 more minute. Then add the rice, diced tomatoes (with juice), chicken broth, paprika, thyme, cayenne, salt, and black pepper. - Simmer:
Return the sausage to the pan. Bring everything to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes, stirring occasionally, until the rice is cooked and liquid is absorbed. - Finish & serve:
Fluff the jambalaya with a fork, garnish with green onions, and serve hot!
Serving Tip:
Craving more protein? Toss in cooked shrimp or shredded rotisserie chicken! Serve with warm cornbread for a full Southern spread.
