Sausage and Peppers

Hearty, Bold, and Comforting an Italian American Favorite!
This one skillet wonder combines juicy Italian sausages, vibrant bell peppers, and sweet onions in a rich tomato herb sauce. Whether served on crusty buns or over pasta, it’s a no-fuss, flavor-packed meal perfect for busy weeknights.


Ingredients

  • 3 tbsp olive oil
  • 4 Italian sausage links (mild or spicy)
  • 3 bell peppers (any color), sliced
  • 3 jalapeños (optional, for heat)
  • 1 medium sweet onion, sliced
  • 6 garlic cloves, minced
  • 1 (15 oz) can fire-roasted tomatoes
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 1 tbsp red chili flakes (optional)
  • Salt and pepper, to taste

Instructions

1. Sear the Sausage

Heat olive oil in a large skillet over medium heat. Brown the sausages for 5 minutes per side, until nicely golden. Remove and set aside.

2. Sauté the Veggies

In the same skillet, add sliced peppers, jalapeños (if using), and onion. Cook for 10 minutes, stirring occasionally until softened and slightly caramelized.

3. Add Garlic

Stir in minced garlic and sauté for 1 minute until fragrant.

4. Build the Sauce

Add fire-roasted tomatoes, basil, oregano, chili flakes (if using), salt, and pepper. Mix well to combine.

5. Return the Sausage

Nestle the browned sausages back into the skillet. Spoon some sauce over the top.

6. Simmer

Lower heat and simmer uncovered for 15–20 minutes, letting the flavors meld and the sausages cook through.


To Serve

  • Pile onto toasted hoagie rolls or crusty baguette for the ultimate sandwich.
  • Or serve over a bed of buttery pasta, creamy polenta, or steamed rice.
