Roasted Feta & Potato Tray Bake
A vibrant, one-pan Mediterranean-inspired dish bursting with flavor! Creamy feta, crispy roasted veggies, and golden potatoes come together for a comforting and easy meal — perfect for busy weeknights or casual entertaining.


Ingredients:

  • 1.5 lbs (700g) baby potatoes, halved
  • 1 red onion, cut into wedges
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half moons
  • 7 oz (200g) block of feta cheese
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and freshly cracked black pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions:

1. Prep & Season the Veggies:
Preheat your oven to 400°F (200°C).
On a large baking tray, toss the halved potatoes, red onion wedges, bell pepper slices, and zucchini with olive oil, oregano, garlic powder, salt, and pepper until evenly coated.

2. Add the Feta:
Push the veggies slightly aside and place the whole block of feta cheese in the center of the tray. Nestle it in so it roasts alongside the vegetables and absorbs the delicious flavors.

3. Roast It All:
Place the tray in the oven and roast for 35–40 minutes, or until the vegetables are golden and tender and the feta is slightly browned and melty at the edges.

4. Serve & Garnish:
Remove the tray from the oven. Using a fork, gently mash the feta and lightly toss it through some of the vegetables for a creamy coating.
Top with fresh chopped basil or parsley for a fresh, herby finish.
