
Ribeye Steak with Caramelized Onions & Creamy Mashed Potatoes

🥩🧅🥔 Juicy ribeye steak, melt-in-your-mouth caramelized onions, and buttery mashed potatoes—it’s comfort food turned gourmet.
🛒 Ingredients
For the Ribeye Steak:
- 2 ribeye steaks (1-inch thick)
- 2 tbsp olive oil
- Salt & pepper to taste
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- Fresh rosemary sprigs (optional)
For the Caramelized Onions:
- 3 large onions, thinly sliced
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 1 tsp sugar
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup beef broth
- 1 tbsp fresh thyme leaves (optional)
For the Mashed Potatoes:
- 2 lbs potatoes, peeled & cubed
- ½ cup milk
- 4 tbsp unsalted butter
- Salt & pepper to taste
- Fresh parsley, chopped (for garnish)
👨🏾🍳 Instructions
1️⃣ Make the Mashed Potatoes:
Boil potatoes until fork-tender (15–20 min). Drain, then mash with milk and butter until creamy. Season with salt & pepper. Keep warm.
2️⃣ Caramelize the Onions:
Melt butter and oil in a pan. Add onions, sugar, salt, and pepper. Cook over medium-low heat, stirring occasionally for 25–30 minutes until golden. Add broth and thyme, cook another 5 mins. Set aside.
3️⃣ Cook the Ribeye:
Heat skillet or grill on high. Rub steaks with oil, season well. Cook 4–5 minutes per side (for medium-rare). In last minute, add butter, garlic & rosemary. Baste the steaks with melted butter. Let rest 5 minutes.
4️⃣ Plate & Serve:
Scoop mashed potatoes onto each plate. Top with ribeye, spoon over those golden onions, and finish with a sprinkle of parsley.
