🐑✨ Pan-Seared Lamb Chops with Caramelized Mushrooms & Juicy Cherry Tomatoes

Elegant, flavorful, and ready in just 25 minutes — this dish is perfect for a cozy dinner for two or a special weeknight treat. Tender lamb chops are seared to golden perfection and topped with buttery, garlicky mushrooms and blistered cherry tomatoes. It’s rustic, simple, and downright irresistible.


🛒 Ingredients:

  • 4 lamb chops
  • 1 cup sliced mushrooms
  • 1/2 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp balsamic vinegar
  • Salt & pepper, to taste
  • 1 tbsp butter

👨‍🍳 Instructions:

  1. Preheat a grill pan or skillet over medium-high heat.
  2. Season the lamb chops generously with salt, pepper, and chopped rosemary.
  3. Sear the Lamb:
    In the hot skillet, heat 1 tbsp of olive oil. Add lamb chops and cook for about 4–5 minutes per side, or until golden brown and cooked to your preferred doneness. Remove and set aside.
  4. Sauté the Veggies:
    In the same pan, melt the butter with the remaining olive oil. Add garlic and sauté for 1 minute until fragrant.
  5. Add Mushrooms and cook for about 5 minutes, stirring occasionally, until caramelized and tender.
  6. Add Tomatoes and cook for another 2–3 minutes, just until they begin to soften.
  7. Deglaze the pan with balsamic vinegar, gently tossing the veggies.
  8. Return the Lamb to the pan for 1–2 minutes to reheat and soak up the flavors.
  9. Serve the lamb chops topped with the mushroom and tomato mixture. Garnish with fresh thyme if desired.
