
Pan Seared Cod in Tomato Basil Sauce
Fresh, fast, and full of flavor – this one-skillet cod dish is your new go-to weeknight dinner!
Ingredients:
- 4 cod fillets (approx. 6 oz each)
- Salt & freshly ground black pepper, to taste
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 small onion, finely chopped
- 2 cups cherry tomatoes, halved
- ½ tsp crushed red pepper flakes (optional for a spicy kick)
- ½ tsp dried oregano
- ½ cup fresh basil, chopped
- Juice of ½ lemon
- Fresh basil leaves, for garnish
Instructions:
- Prep the Cod:
Pat your cod fillets dry with paper towels. Season generously with salt and black pepper on both sides. - Sear the Fish:
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add cod fillets and sear for 3–4 minutes per side, or until golden brown and flaky. Transfer to a plate and set aside. - Make the Sauce:
In the same skillet, add a splash more oil if needed. Sauté the minced garlic and chopped onion for about 2–3 minutes until soft and aromatic. - Add Tomatoes & Spices:
Toss in the cherry tomatoes, crushed red pepper flakes, dried oregano, and a pinch of salt. Cook for 5–7 minutes, stirring occasionally, until the tomatoes soften and begin to burst. - Brighten it Up:
Stir in the fresh chopped basil and a squeeze of lemon juice. Let it simmer for another 2 minutes to blend the flavors. - Bring it All Together:
Return the cod fillets to the skillet and gently spoon the warm tomato-basil sauce over the top. Let them heat through for another 1–2 minutes. - Serve & Enjoy:
Plate the cod with a generous helping of the sauce, and garnish with extra fresh basil. Serve with crusty bread, rice, or a light salad!
