  • Salt & pepper to taste
  • 1 tbsp fish sauce
  • 1 tsp fresh ginger (grated)

For the Veggie Stir-Fry:

  • 10 garlic cloves (minced)
  • 2 tsp fresh ginger (grated)
  • 2 cups shredded cabbage
  • 2 cups broccoli florets
  • 2 carrots (shredded)
  • 4 green onions (sliced)
  • 6 oz mushrooms (sliced)
  • 2 celery stalks (sliced)

For the Noodles & Sauce:

  • 8 oz buckwheat lo mein noodles
  • ¼ cup soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp fish sauce
  • 1 tsp black pepper
  • 2 tbsp Szechuan garlic butter
  • Cooking oil (canola or veg oil)

👨‍🍳 How to Make It

1️⃣ Marinate the Chicken:
In a bowl, toss chicken cubes with garlic powder, salt, pepper, fish sauce, and ginger. Let it sit while prepping the veggies.

2️⃣ Cook the Noodles:
Boil lo mein noodles per package—but go 1–2 minutes under for that perfect bite. Drain and set aside.

3️⃣ Sear the Chicken:
Heat 1 tbsp oil in a wok/skillet. Add chicken and cook for 6–8 mins, flipping until golden.
In the last 2 mins, stir in 1 tbsp Szechuan garlic butter + half the garlic for bold flavor.
Remove and set aside.

4️⃣ Stir-Fry the Veggies:
In the same pan, add a splash more oil.
Add remaining garlic + ginger—sauté 1 minute.
Toss in cabbage, broccoli, carrots, onions, mushrooms, and celery. Stir-fry for 5–7 minutes until just tender.

5️⃣ Combine Everything:
Return chicken to pan.
Add noodles + soy sauce, hoisin, fish sauce, black pepper, and the rest of the Szechuan garlic butter.
Toss well to coat everything in that saucy goodness. Stir-fry for 2–3 mins until the noodles are glossy and coated.

6️⃣ Serve & Devour:
Plate it up hot. Sprinkle with extra green onions or chili flakes if you’re feeling wild.
