1. Prepare the Steaks

Season the filet mignon steaks with salt and black pepper. Let them rest at room temperature for 30 minutes to ensure even cooking.

2. Sear the Steaks

Heat 2 tbsp olive oil in a skillet over high heat. Sear the steaks for about 3–4 minutes on each side for a medium-rare finish. In the last minute of cooking, add 1 tbsp butter to the skillet and baste the steaks with the melted butter. Remove the steaks from the skillet and let them rest for a few minutes.

3. Make the Peppercorn Sauce

In the same skillet, melt 1 tbsp butter. Add the chopped shallots and sauté until softened, about 2 minutes. Stir in the crushed peppercorns and cook for 30 seconds.

4. Add Broth and Cream

Pour in the beef broth and bring it to a simmer. Cook until the liquid has reduced by half, about 4–5 minutes. Stir in the heavy cream and cook, stirring occasionally, until the sauce thickens to your liking.

5. Serve
