  • 4 large russet or Yukon gold potatoes
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 1 can black beans, rinsed and drained (or use pinto beans)
  • 1 cup cooked ground beef or turkey (optional for vegetarians)
  • 1 packet taco seasoning
  • 1 cup salsa (mild, medium, or spicy — your call!)
  • 1/4 cup sour cream (or Greek yogurt for a lighter option)
  • Chopped green onions, for garnish

🔥 Step 1: Preheat the Oven

Preheat to 400°F (200°C). This ensures the potatoes cook evenly with crispy skins and fluffy centers.

Wash and scrub the potatoes. Prick each with a fork several times.
